Oh jello shots, i’m trying to help rectify the very bad reputation that you’ve inherited from being a favorite at college parties… you don’t have to be a cheap way to get drunk (anymore)… i think we can be good friends at a classier, more grown-up type of party, n’est-ce pas?
the inspiration for these jello shots came from another drink – my raspberry lime mojitos. in prepping for a party where i was to provide the mojitos, i was industriously juicing a dozen limes when my mind wandered and i wondered if i can reuse the cute lime peels. a few keystrokes to research online revealed others’ ventured into the same thing – i can’t claim this to be all my own idea… however, i switched vodka out and in goes rum because i never liked vodka jello shots.

what you’ll need:
Ingredients:
6 limes – cut in half and juiced (save the juice for something else)
1 package of green jello (lime flavor)
1 cup boiling water
1 cup rum
1 muffin pan
The most labor intensive step is the first:
take the lime that is already juiced, using your fingers, ‘grab’ at the fleshy white-ish skin part inside the lime. if you’ve ever eaten sliced oranges, you know how you can yank the inside peel away from the skin itself… this part is time consuming but not difficult – just takes a bit of patience (beware this stings if you have any cuts on your fingers).
after that, if the end of the lime half is very sharp, it won’t stay nicely in the muffin pan – so cut a small part of it to create a flatter surface on the end.
Sit each lime half with the bigger end facing up in the muffin pan, ready for the jello to be poured.
Take 1 cup of boiling water, and add jello mix. make sure it’s incorporated together, then add 1 cup of rum. Stir for another 5 seconds for everything to be mixed.
Pour into each half of the lime
And refrigerate for 3 hours until jello sets.

Once jello is set, carefully slice the lime into wedges (sharp knife helps tremendously)
and voila. jello shots classy enough for afternoon tea, even. i think i’ll have to try Malibu rum in it next time thought… *cue ‘put the lime in a coconut’ song - cuz we’re classy like that!*

cute idea – but the green of the jello just doesn’t compliment the limes. Another color jello – mix green with yellow? You could also use the lime halves as a container (glass) for frozen daiquiris. I have a great recipe.

Yeah i think next time i’ll ‘lighten’ the jello so it’s lighter green, and also switch it for malibu rum cause i actually *like* the taste of the malibu! we need to cook together again soon! miss you much.
